Whoopie Pies

This is an old time favorite of those who remember the “Whoppie Pie.” These were made for us as young girls at slumber parties. We ate so many we got tummy aches!

Ingredients:

1/2 c. butter or margarine
1 c. sugar
1 egg
1 c. milk
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1/2 c. cocoa
1 1/2 tsp. baking soda
1/2 tsp. baking powder

Directions:

Cream together the butter and sugar. Add vanilla, egg and milk, beat well. Sift together the dry ingredients and stir briskly into the creamed mixture. Drop by spoonfuls on a cookie sheet lined with foil and bake at 350 degrees for 7 minutes.

Filling…

Ingredients:

1/2 c. butter or margarine
1 c. confectioners’ sugar
1 c. marshmallow fluff/cream
1/2 tsp. vanilla

Directions:

Beat together ingredients. Spread filling on one cake/cookie and top with another. If you want chocolate filling, you can add a few tablespoons of cocoa and increase butter to 2/3 c. Also, you can roll whoopie pies in colored sprinkles or add food color to the fluff. I do hope you enjoy!
